I’m Louise – a wife to my husband Luke, mama to two boys and owner/author/recipe developer at Beet and Two Veg.\n\n[/cs_content_seo][cs_element_gap _id=”5″ ][cs_element_layout_grid _id=”6″ ][cs_element_layout_cell _id=”7″ ][cs_element_image _id=”8″ ][/cs_element_layout_cell][cs_element_layout_cell _id=”9″ ][cs_element_image _id=”10″ ][/cs_element_layout_cell][/cs_element_layout_grid][cs_element_gap _id=”11″ ][cs_element_text _id=”12″ ][cs_content_seo]I have a confession to make – I don’t actually enjoy cooking. I normally have around 10 other things I should be doing and two kids outdoing each other in a noise challenge!
Switching to a plant-based diet is tricky enough, without trying to learn new dishes in the middle of a noise challenge between two (or more if you’re that brave) children.
Then after you have been sweating in the kitchen for the better part of an hour your kids look at the food like is going to attack them.
I get it because I have been there!
That’s why at Beet and Two Veg I only post simple plant-based recipes that have been tested on my kids, and helpful food hacks and tips. With special attention to cooking with kids and moving your family to a plant-based diet.
When I switched my family to a plant-based diet I found that most of the recipes just were not family friendly.
Either needing tons of random ingredients, involving a lot of time in the kitchen, or were meals that my 4 year old would have eyed with suspicion.
I joined plant-based groups and found so many other parents with the same problem so I knew I had to start Beet and Two Veg to provide that missing support.
I’m not going to promise that my meals are always made using fresh and wholesome ingredients because sometimes all I have time to do is bung something in the oven or cobble a meal together out of whatever we have left in the freezer!
I refuse to cook two (or more) meals so my kids eat everything we do (even the baby), this means our recipes are suitable for a family of all ages – I’m also partial to a sharing meal with a group of family and friends so you’ll find plenty of those too!\n\n[/cs_content_seo][/cs_element_layout_column][cs_element_layout_column _id=”13″ ][cs_element_layout_grid _id=”14″ ][cs_element_layout_cell _id=”15″ ][cs_element_image _id=”16″ ][/cs_element_layout_cell][cs_element_layout_cell _id=”17″ ][cs_element_image _id=”18″ ][/cs_element_layout_cell][/cs_element_layout_grid][cs_element_gap _id=”19″ ][cs_element_text _id=”20″ ][cs_content_seo]I believe that teaching children about nutrition and giving them the skills to cook is so important – plus getting your little ones involved in the kitchen is really fun (I promise)!
This is why I dedicate a small chunk of text on my recipes showing you how you can get the kids involved.
As a working mum with two children I know how hard it can be to find the time to cook, clean, shop, work, sleep, and spend time with friends and family – let alone find time for yourself.
Hopefully, this will give you some inspiration for a new idea to try, or even just some tips to make life a little easier.
I’d love to hear from you so either drop a comment on one of my posts or email me at [email protected].\n\n[/cs_content_seo][/cs_element_layout_column][/cs_element_layout_row][/cs_element_section][cs_element_section _id=”21″ ][cs_element_layout_row _id=”22″ ][cs_element_layout_column _id=”23″ ][cs_element_headline _id=”24″ ][cs_content_seo]My Favourite Recipe\n\nSubheadline space\n\n[/cs_content_seo][cs_element_image _id=”25″ ][cs_element_text _id=”26″ ][cs_content_seo]Chorizo Vegetable Traybake
I love this recipe for many reasons – it’s simple, completely customisable, and it is so delicious! While it’s a meal on its own I enjoy it most with some crusty bread.\n\n[/cs_content_seo][/cs_element_layout_column][/cs_element_layout_row][/cs_element_section][cs_element_section _id=”27″ ][cs_element_layout_row _id=”28″ ][cs_element_layout_column _id=”29″ ][cs_element_headline _id=”30″ ][cs_content_seo]The Kids Favourite Recipe\n\nSubheadline space\n\n[/cs_content_seo][cs_element_image _id=”31″ ][cs_element_text _id=”32″ ][cs_content_seo]Butternut Squash and Red Onion Tart
