Granola, yogurt and fruit is a staple breakfast in our house and I have it every morning. I love it because it fills me up, I can prep it well in advance, and it tastes so good.

cream cheese bagel

This recipe has everything you need in a simple snack idea. It's simple and delicious, can be prepped in advance, travels well, and involves hidden veggies.

Enjoy at home, at work or even add a bagel to the kids lunch box for an easy way to add hidden veggies into their diet.

  • In a bowl add the vegan cream cheese, garlic powder, red onion, and grated carrot.
  • Toast your bagels and top them with a thick spreading of the cream cheese mixture.

Falafel Wraps

For lunch put together a falafel wrap for a quick on the go option.

Salad: packet salad is the easiest option but if you have some time to spare I really suggest sautéing some red peppers and red onion instead.

Sauce: you can complete your wrap with any kind of sauce but my favourite choices are mango chutney or one of my creamy dairy-free sauces

Lentil bolognese

This is a family favourite in our house, and for good reason! It's easy to prep and cook, it's packed full of healthy ingredients, and its cheap so perfect if you're on a budget.

If you want to get even more food for your calories try switching half a portion of the spaghetti noodles for boodles or zoodles.

  • Cook the lentils (in water or use the stock cube to add flavour) and the spaghetti noodles in two separate pans. 
  • Add the garlic, mushroom and red onions to a pan and cook until softened. 
  • At this point you need to add the tinned tomatoes, dried herbs, salt and pepper. 
  • Once the sauce is bubbling add in the lentils and pasta, mix it all up and enjoy.
