Vegan Sausage, Bean and Cheese Melt

This vegan sausage, bean and cheese melt combines tangy protein packed beans, meaty vegan cocktail sausages and creamy plant-based cheese in a delicate and flaky puff pastry shell. Baked until they’re golden and crispy on the outside, these melts make for a perfect vegan snack meal prep idea.

 In our household these vegan sausage, bean and cheese melts have always been our favourite family snack, especially my kids – they love it when we whip up a batch of these! 

These are a great option for lunch boxes or a vegan snack meal prep idea as they taste delicious hot or cold, meaning you can prep them in advance and store them in the fridge or freezer.

Vegan Sausage, Bean and Cheese Melt Recipe Tips

There is a definite trick to getting these closed with spilling the insides all over the place!

When you’re putting the Sausage, Bean and Cheese Melt together make sure to leave a gap between the edge of the puff pastry and your filling ingredients so that you have space to close it.

It can be tricky to get those edges tightly secured together. I find that brushing some water all around the edges helps to glue the edges together then you can give them a good pinch to close.

If you have any leakages don’t worry, just use a spoon to scoop all the escaped beans and cheese back into the Melt before sealing the final side.

Don’t overfill your melt! You need to be able to close it with enough space to pinch the edges.

Puff Pastry: Unless you feel particularly confident in making your own puff pastry, get the ready made stuff so that you have an even thickness the whole way around. If you decide to try and make your own puff pastry check out this easy vegan puff pastry recipe by Delicious Everyday
Filling: while you can fill these little puff pastry pockets with whatever fillings you choose, I have decided to go with the classic vegan sausages, beans and plant-based cheese.
