Toasted BBQ Tofu Sandwich

Fresh and filling plant-based sandwich, perfect for a vegan lunch. Firm tofu slices marinated in a smoky and sticky BBQ sauce and baked until the outside is crispy. This is sandwiched between two toasted slices of white bread, fresh lettuce and carrot. All finished with a layer of silky creamy mayonnaise.

  • 280 g firm tofu
  • 8 tbsp BBQ sauce
  • 8 slices white bread
  • 2 carrots
  • 150 g lettuce
  • 8 tbsp Mayonnaise


  • Pre-heat the oven to 200C / 390F / Gas mark 6.
  • Press and slice the tofu into slices around 1cm thick.
  • Cover the sliced tofu in the BBQ sauce and leave it to marinate, preferably for at least a few hours but you can use it straight away.
  • Spread the tofu slices out on a lined baking tray and bake in the oven for 20 minutes.
  • Peel the outer skin off of the carrots then use the peeler to peel long thin slices of carrot.
  • Toast your bread and build your sandwich by layering all of the ingredients.
